Squished Berry Petillant Naturel 2025 was crafted from our small parcel of Petite Manseng vines using Methode Ancestrale. This original method of making sparkling wines was first recorded in 1531, where wines are bottled and capped prior to completing ferment. As the ferment completes in the bottle, the carbon dioxide from the remeining ferment, integrates with the wine under pressure. As the ferment concludes, the residual yeast lees also remain in the bottle providing a slightly cloudy but deliciously creamy sparkling wine.
